Lemon Garlic Herb Chicken

Ingredients:

-4 lbs of chicken thighs, bone in and skin on

-4 garlic cloves, minced

-2 tbs olive oil

-juice of one lemon

-1 tbs dried parsley

-1 tbs dried oregano

-1 tbs dried basil

-2 tsp dried thyme

-1 tsp red chili flakes

-1 tsp salt

-1 tsp pepper

Instructions:

-trim off excess skin, separate the meat from the bone, and make two slits about 1-inch in length and half-an-inch deep on the skin side

-add the chicken to a bowl with the rest of the listed ingredients; mix well

-cover the bowl and marinate in the fridge for at least two hours but preferably overnight (optional)

-preheat oven to 400F

-place chicken on a wired rack and bake for about 45 minutes

-cook until internal temperature is 165F-180F

-allow chicken to rest for 10 minutes

-enjoy!
