Chipotle Chicken 🍗
-3 lbs chicken thighs, boneless and skinless
-1 can chipotle peppers in adobo sauce
-2 tbs avocado oil
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs ground cumin
-1 tbs smoked paprika
-1 tbs dried oregano
-2 tsp salt
-2 tsp pepper
-juice of one lime
Instructions:
-add chicken to a bowl with everything listed; mix well
-marinate for at least 4 hours
-preheat grill to 400F and cook each side for 3-4 minutes until internal temp is 165F
-rest for 10 min before cutting
Cilantro Lime Rice 🍚
-2 cups uncooked white rice
-3 cups water or chicken bone broth
-1/2 cup chopped cilantro
-1 tbs avocado oil
-3 limes
-2 tsp salt
-dried bay leaf
Instructions:
-add washed rice and water to a rice cooker; top with a dried bay leaf and cook until light and fluffy
-transfer to a bowl; mix with the rest of the ingredients listed
Black Beans and Corn 🫘
-one 15-oz. can unsalted black beans
-one 15-oz. can unsalted corn
-8 oz. water
-one small can of diced green chilies

-simmer on low heat for 10-15 min until tender

-2 bell peppers, thinly sliced

-add everything to a bowl; mix well

-1/2 cup mayo or Greek yogurt
-hot sauce of your choice
-juice of half a lime
-1 tsp salt
