Roasted Broccoli Lentil Quinoa Bowl With Zucchini

Ingredients:

-3 cups cooked quinoa (or grain of choice)

-1 cup cooked lentils

-1 head of broccoli, cut into small florets

-1 large zucchini, quartered and thinly sliced

-1 yellow onion, small diced

-3 cloves of garlic, thinly sliced

-2 tsp onion powder

-2 tsp garlic powder

-1 tsp dried oregano

-1 tsp smoked paprika

-1 tsp red chili flakes

-salt and pepper

Homemade Vinaigrette:

-1/3 cup olive oil

-1/4 cup balsamic or red wine vinegar

-2 tbs honey or maple syrup

-1 tbs tahini

-1 tbs dijon mustard

-salt and pepper

Instructions:

-preheat oven to 400F

-spread broccoli on a baking sheet, lightly drizzle with olive oil, and season with salt and pepper

-roast in oven for 25-30 minutes until lightly browned and some edges are crisp

-set a deep pan or Dutch oven on medium heat and add 3 tbs olive oil

-add mushrooms and sear until brown, about 5-7 minutes; add salt and pepper

-add in onion and zucchini; sauté for 5 minutes and add salt and pepper

-add in garlic and sauté for 1 minute

-add cooked lentils and the onion powder, garlic powder, dried oregano, smoked paprika, and red chili flakes; mix together well

-mix in the roasted broccoli and remove from heat

-add cooked quinoa (or grain of choice) to meal containers and top with our vegetable lentil mix

-drizzle with homemade vinaigrette

-store in fridge for up to 4 days or in freezer for up to 6 months
