Ingredients:

-1 lb 96% lean ground beef

-24 oz. (2 small bags) cauliflower rice

-20 oz. crushed tomatoes

-8 oz. beef or chicken bone broth

-1 medium sweet onion, small diced

-1 medium zucchini, small diced

-3 garlic cloves, minced

-1 tbs tomato paste

-1 tsp dried basil

-1 tsp dried oregano

-1 tsp dried parsley

-1 tsp garlic powder

-1 tsp salt

-1 tsp pepper

-1/2 tsp red chili flakes

-2 tbs olive oil for cooking

Instructions:

-heat a deep pan or large pot on medium-high heat and add 1 tbs olive oil

-add beef, break up into smaller pieces, and cook until brown

-add onions and garlic; sauté until soft

-add a 1/2 tsp of both salt and pepper, all of the dried herbs, and red chili flakes; mix well

-add tomato paste and cook down for 1 min

-add in crushed tomatoes, rinse the can with bone broth, and add in the bone broth

-mix well, lower heat, cover, and simmer for 10 min

-set a large pan on high heat and add 1 tbs oil

-add in zucchini, cauliflower rice, a 1/2 tsp of both salt and pepper, onion powder, and mix well

-sauté for 5 min until tender

-build bowls and store in the fridge for up to 5 days or in the freezer for up to 6 months
