Ingredients 🛒

• 1.5 lbs boneless chicken breast, cubed

• 3 tbsp olive oil

• Juice of 1 lemon

• 2 tsp garlic, minced

• 1 tsp dried oregano

• 1/2 tsp paprika

• Salt & pepper, to taste

• 2 cups chopped cucumber

• 1 cup diced tomatoes

• 1 cup shredded romaine

Tzatziki Sauce:

• 1 cup plain dairy free yogurt

• 1/2 cucumber, finely grated and squeezed dry

• 1 tbsp lemon juice

• 1 clove garlic, minced

• 1 tbsp chopped fresh dill

• Salt to taste

Instructions 👩‍🍳

1️⃣ Marinate chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Chill 30 mins.

2️⃣ Grill skewers until charred and cooked through (about 10–12 mins).

3️⃣ Mix tzatziki ingredients in a bowl.

4️⃣ Serve skewers over lettuce with cucumbers, tomatoes, and a dollop of tzatziki.
