Stuffed Cabbage Rolls

Stuffed Cabbage Rolls

Ingredients:

1 large head of cabbage

1 pound ground meat (beef, pork, or turkey)

1 cup cooked riced cauliflower

1 onion, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup tomato sauce

Instructions:

Bring a large pot of water to a boil.

Remove the cabbage leaves from the head and blanch in boiling water for 30 seconds.

In a large mixing bowl, combine the ground meat, cooked rice, chopped onion, salt, and pepper.

Mix well with your hands or a wooden spoon.

To assemble the cabbage rolls, lay a blanched cabbage leaf flat on a work surface.

Place about 1/4 cup of the meat mixture in the center of the cabbage leaf.

Fold the stem end over the filling, then fold in the sides and roll the cabbage leaf into a snug package.

Repeat with the remaining cabbage leaves and meat mixture.

In a large Dutch oven or saucepan, combine the tomato sauce and enough water to cover the cabbage rolls.

1 Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.

Serve the stuffed cabbage rolls hot, garnished with chopped fresh parsley or dill.

... Read moreThere's something incredibly comforting about a pot of homemade stuffed cabbage rolls simmering on the stove. It’s not just a meal; it's an experience, filling your kitchen with the most inviting aromas! While the core recipe is fantastic, I've got a few extra tips and insights to help you perfect this classic dish and maybe even explore some delicious variations. First, let's talk about the magic of the simmer. You know that incredible aroma that fills your kitchen when something is simmering slowly? That's exactly what happens with these stuffed cabbage rolls! The prolonged, gentle heat in that rich red tomato sauce isn't just about cooking; it's about melding all those incredible flavors together. It transforms the humble cabbage leaves into tender, melt-in-your-mouth wrappers and ensures the meat filling is juicy and perfectly cooked. I always make sure there's enough sauce to generously cover those neatly wrapped cabbage rolls, ensuring they stay moist and tender as they simmer. Don't rush this step; low and slow is absolutely the way to go for maximum flavor development. Now, about the filling! Many traditional recipes for 'cabbage rolls with meat and rice' use white rice, which is absolutely delicious and adds a wonderful texture. However, for those looking for a lighter, low-carb alternative, my recipe's use of riced cauliflower is a game-changer! It absorbs all the savory juices from the ground meat (whether you choose beef, pork, or turkey, or even a mix!) and the seasonings, without making the rolls heavy. If you prefer traditional rice, simply swap out the riced cauliflower for about 1/2 cup of cooked short-grain rice. The key is to have the rice cooked before mixing, so it finishes cooking perfectly within the roll. Experiment with your favorite ground meat combination and feel free to add a little extra garlic or a pinch of smoked paprika to the filling for an extra layer of flavor. And what about that inviting sauce? Once, I experimented by adding a splash of red wine to the tomato sauce base before simmering, and it added an incredible depth. You can also play with herbs beyond parsley or dill – a sprig of fresh thyme or a bay leaf tucked into the simmering pot can elevate the aroma even further. For those times I’m not using a pot on the stove, I've also successfully prepared these in a large *baking pan*. Just arrange your rolls snugly, pour over the sauce, and cover the pan tightly with foil before baking at a lower temperature (around 325°F or 160°C) for a longer period. The 'cabbage wrapped in foil' technique is fantastic for trapping moisture and ensuring everything gets beautifully tender in the oven. While my recipe doesn't explicitly claim to be 'Balkan stuffed cabbage rolls,' it shares many similarities with these hearty, comforting dishes found across Eastern Europe. The principle of savory meat and a grain (or veggie substitute like riced cauliflower) wrapped in blanched cabbage and simmered in a tomato-based sauce is universal. This recipe is a wonderful starting point if you're interested in exploring those rich culinary traditions. Don't be shy about adding a dollop of sour cream or plain Greek yogurt when serving; it’s a classic pairing that adds a lovely creamy tang. Enjoy making these comforting rolls; they always bring a smile to everyone's face!
