These cookie bars are a fantastic alternative to traditional cookies, combining healthful ingredients like garbanzo beans and old-fashioned oats for added protein and fiber. Garbanzo beans (also known as chickpeas) contribute to the moisture and density of the bars while boosting their nutritional profile. Using unsweetened applesauce and coconut oil helps reduce processed fats and sugars, making the recipe more wholesome. The recipe incorporates a variety of natural sweeteners such as monk fruit, stevia, xylitol, or erythritol, which are excellent options for those seeking low-glycemic or diabetic-friendly desserts without sacrificing sweetness. Inclusion of baking powder and baking soda ensures the bars rise slightly, giving them a soft, chewy texture. Adding Lily's chocolate chips, which are typically sugar-free and sweetened with stevia, maintains indulgence without excess calories or sugar spikes. Optional toppings like unsweetened coconut flakes and pecans introduce added flavor and texture, along with healthy fats and antioxidants. Baking at 350 degrees Fahrenheit for 35-40 minutes allows the bars to cook through without becoming dry. Letting the bars cool before serving helps them set properly and enhances their taste and texture. This recipe yields about 15 servings, each providing approximately 168 calories and 7.2 grams of protein, making it an excellent snack for maintaining energy levels and supporting muscle health. The use of Himalayan salt adds trace minerals and a subtle mineral taste. For those interested in vegan or gluten-free baking, these cookie bars fit perfectly as they avoid eggs, dairy, and gluten-containing flours. This makes them versatile and suitable for various dietary needs. Experiment with different mix-ins such as nuts, dried fruits, or seeds to customize according to personal preference while maintaining the base’s nutritional benefits.
