Green Chile Enchilada Soup 💚💚

Ingredients:

24 oz chicken breast

1 c. green chile

6 cups chicken broth

½ tsp cumin

¼ tsp pepper

¼ tsp garlic powder

2 cups, 2% Monterey Jack and Colby cheese

4 oz Greek yogurt

1 cup fresh cilantro

Directions:

In a 6-quart slow cooker, add chicken breast, green chile, & chicken broth. Cook on low 6 to 8 hours. Removed chicken & shred.

In a small bowl, mix 1 or 2 ladles of soup with the Greek yogurt and mix well. Then, add the mixture back into the slow cooker. Add shredded chicken and cilantro. Stir until cheeses are melted. Top with optional condiments and serve!

Optional garnish:

Avocado 2 Tbsp = +1 healthy fat

Green onion 1 Tbps = +1 condiment

Sour Cream 2 Tbsp = +1 healthy fat
