Dove Jalapeño Poppers with steak

This is one of my favorite things during fall. My partner loves to hunt so we go out and hunt dove. If you’re not a fan of dove that is okay! Heres what you need to make them:

8 Large jalapeños (cut in half to make 16)

8oz of cream cheese (I use the ones in a container makes it easier to mix)

Shredded cheese, as much as you’d like (will get mixed into the cream cheese with seasonings)

Bacon!!!!

Dove (or if you’d like lil smokies instead)

We had this with a side of Mashed potatoes, gravy, and corn!!!

While my original recipe focused on those delicious dove jalapeño poppers, I've found that pairing them with a well-prepared steak truly elevates the entire experience. If you’re like me and often search for ways to make your game dinners even more special, you'll love these tips for getting that steak just right. First, let's talk about the steak itself. For a meal like this, I usually go for cuts that are flavorful but not overly fatty, so they complement the richness of the bacon-wrapped dove without overpowering it. Sirloin, flank steak, or even a good quality flat iron steak are fantastic choices. They cook relatively quickly and can develop a beautiful crust, adding texture and depth to your plate. When I'm planning this meal, I always make sure to pick a steak that looks well-marbled, as that usually means more flavor and tenderness. Seasoning is key for those seasoned steaks you see in my photos! Beyond just salt and pepper, I love to create a simple rub. A mix of garlic powder, onion powder, a pinch of smoked paprika, and a touch of dried rosemary or thyme works wonders. I rub this generously on both sides of the steak at least 30 minutes before cooking, or even let it sit in the fridge for a couple of hours if I have time. This really allows the flavors to penetrate the meat, making every bite incredibly savory. Now, for cooking the steak. Whether I'm grilling outdoors or pan-searing indoors, the goal is a beautiful, caramelized crust and a juicy interior. For pan-searing, I heat a cast iron skillet over medium-high heat with a little olive oil or butter until it’s shimmering. Then, I sear the steak for about 3-4 minutes per side for a medium-rare to medium doneness, depending on thickness. Don't crowd the pan! If you're cooking more than one, do them in batches. After searing, I always let the steak rest for 5-10 minutes on a cutting board. This step is crucial – it allows the juices to redistribute, ensuring a tender and flavorful steak. Serving the steak alongside the dove jalapeño poppers creates such a balanced and satisfying meal. The smoky, spicy kick from the poppers, especially those bacon-wrapped jalapeño poppers or dove pieces, pairs wonderfully with the robust flavor of the steak. And to lighten things up a bit, I often include some fresh sides. You might have spotted some fresh cucumbers in my pictures; a simple cucumber salad with a light vinaigrette is a fantastic way to add a refreshing crunch that cuts through the richness of the meat. It’s all about creating that perfect plate where every element shines and complements each other. This combination truly makes for a memorable fall feast that my partner and I look forward to every year!
