LOW CARB RECIPE!
Banh cuon or Vietnamese rice noodles rolls is one of my favorite dishes because it tastes so refreshing! This is a great recipe for anyone who is following a low-carb and/or gluten free diet. I added some carrots and shiitake mushrooms for added color and nutrients which are not in a typical banh cuon recipe. The addition turned out really nicely! To make this, you need:
Yield: 6 rolls
6 sheets medium rice paper
1 tsp oil
1 tsp garlic
4 dried shiitake mushrooms, rehydrated and chopped
10 g woodear mushrooms rehydrated and chopped
1 large carrot, chopped
175 g ground pork
1/8 tsp salt
1/8 tsp white pepper
2-3 tsp fish sauce
2 tbsp chopped green onions
Fried shallots or onions to top
Green onions to top
For dipping sauce (nuoc Cham):
1/4 c water
1 tbsp fish sauce
1 1/2 tsp sugar
1 1/2 tsp chili garlic sauce
Directions:
1. Soak the rice, paper sheets and water for 15 minutes.
2. In the meantime, heat a skillet over high heat. Sauté garlic with oil and add carrots, shiitake, and woodear mushrooms for 3 min.
3. Add the pork in. Seasoned with salt, pepper, and fish sauce. Cook until the pork is no longer pink.
4. Turn the heat off and add the green onions. Stir and let the remaining heat cook the green onions.
5. Add the filling into the softened rice paper sheets.
6. Mix all of the sauce ingredients in a small bowl.
7. Top the rolls with the sauce, fried shallots, and more green onions.
