20 minute lazy dish - steamed ponzu salmon

Ingredients:
1 salmon fillet (8 oz)
12 Green onion pieces cut into 3 inch strips (white portions preferably)
2 tsp cooking michiu (optional)
â…› tsp salt
½ c shimeji mushrooms
½ tsp sugar
2 tsp water
â…› tsp dashi powder
1 tbsp soy sauce
1 tsp rice vinegar
1 ½ - 2 tsp lemon juice
1 handful very thinly sliced green onions
1 tbsp avocado oil (optional)
red chilis to top
Directions:
1. In a shallow bowl/plate, lay down green onion pieces and place the salmon fillet on top.
2. Rub cooking michiu and salt on the fillet. Add shimeji mushrooms on top.
3. Prepare a steamer and bring the water to a boil. Add the salmon in the steamer and steam the fish on high heat for 9 minutes.
4. In a small bowl, to make the ponzu sauce, combine sugar, hot water, dashi powder, soy sauce, rice vinegar, and lemon juice. Stir until the sugar and dashi powder dissolves.
5. Remove the fish from the steamer and pour out most of the water in the plate. Add the thinly sliced green onion strips on top and pour the ponzu sauce over the fish.
6. If you want to add sizzling oil on top, heat oil in a small pot to 230 F. Pour the sizzling oil over the green onions.
