Ingredients (4–5 servings)

Chicken

• 1½ lbs boneless, skinless chicken breast

• 1 tbsp olive oil

• 1 tsp chili powder

• 1 tsp cumin

• 1 tsp smoked paprika

• ½ tsp garlic powder

• Salt & pepper to taste

Bowls

• 2 cups cooked rice (white, brown, or cilantro-lime)

• 1 can black beans, rinsed and drained

• 1 cup corn (fresh or frozen)

• 1½ cups bell peppers & onions, sliced

• 1 cup cherry tomatoes, halved

• Optional: shredded cheese, avocado, sour cream, salsa

Instructions

1. Cook the chicken

Toss chicken with olive oil and spices. Cook in a skillet over medium heat for 6–7 minutes per side or until fully cooked. Let rest, then slice.

2. Sauté veggies

In the same pan, sauté peppers and onions for 4–5 minutes until soft and lightly charred.

3. Heat beans & corn

Warm black beans and corn in a small pan or microwave.

4. Assemble for meal prep

Divide rice into containers. Top with chicken, veggies, beans, corn, and tomatoes. Add cold toppings (like avocado) just before eating.
