Making low carb oatmeal cookies is a great way to enjoy a sweet treat without compromising your dietary goals. While traditional oatmeal cookies can be high in carbs and sugars, this recipe smartly incorporates a granulated sweetener and powdered sweetener for the glaze, reducing the overall carbohydrate count. One thing I've found useful when working with this dough is to be patient with its crumbly texture. The presence of oats and less flour means the dough doesn’t hold together as smoothly as traditional cookie dough, but this is perfectly normal. Lightly chilling the dough in the fridge for about 15 minutes before scooping can help it firm up, making it easier to handle. The combination of cinnamon and vanilla plays a crucial role in adding depth to the flavor. Cinnamon not only adds warmth but also complements the natural nuttiness of the oats and wheat flour. The vanilla in both the dough and the glaze infuses a rich aroma that makes each bite feel indulgent. When baking, keep a close eye on the cookies after around 10 minutes to avoid over-baking, which can dry them out. The glazed topping with powdered sweetener and heavy cream creates a luscious finish that's both satisfying and fits well within a low carb lifestyle. Lastly, always try to use organic and high-quality ingredients, as they can enhance both the flavor and nutritional value of your treats. Whether you're on a keto diet or just trying to cut down on carbs, these low carb oatmeal cookies provide a delicious option without sacrificing taste.
