Chicken & Sweet Potato Bowl
Ingredients:
Chicken and sweet potatoes-
- 1lb boneless, skinless chicken breast (cut into 1-inch pieces)
- 2 Medium sweet potatoes (peeled and diced up)
- Seasoning of choice for both.
- for the chicken I used garlic powder, cumin, salt, and black pepper
- for the sweet potatoes I used paprika and brown sugar
- Olive oil for sautéing and roasting
Sauce-
- 1/4 cup Mayonnaise
-1/2 cup Greek Yogurt Plain
- 2 tablespoons of fresh lime juice
- 1 tablespoon of honey
Optional: 1 teaspoon Sriracha, 1 clove minced garlic
Assembly and Garnish-
- 1 cup of rice( your choice)
-1 can black beans; rinsed and drained
- Avocado slices
-lime slices
-cilantro
Directions:
1) Roast the sweet potatoes, tossed with olive oil and spices, at 400 degrees for 20-25 mins. Or until tender and caramelized.
-flip halfway through for even browning
2) Sear the seasoned chicken in a hot skillet over medium-high heat for 5-7 mins. Until it reaches an internal temp of 165 degrees
3) Cook the rice of your choice and black beans while waiting for the sweet potatoes to be done.
4) Whisk together all the creamy lime sauce ingredients until smooth:
- Mayonnaise, Greek Yogurt, lime juice, and honey
5) Layer the bowl to your liking and top with lime sauce. I would stir the sauce in so it reaches all parts of the meal!
