From Struggle to Gratitude: How Far We’ve Come
Feeling reflective today and so grateful for where life has taken me. It’s funny to think back on how far I've come. There was a time when I was 20, living in a cramped three-bedroom apartment with my dad, kid sister, uncle, cousin, nana, and my kid brother. We were in a rough neighborhood, trying to stay warm in the dead of winter—so cold that you could see your breath.
I remember using "simmer pots" as a makeshift way to heat our home, blocking off the living room because the heat didn’t circulate well. I would make huge stock pots of soup from food pantry ingredients, Family Dollar finds, and the cheapest chicken cuts I could get. Sometimes, my chicken pot pie didn’t even have chicken—just a couple cans of veggies and gravy with a homemade crust from dollar store biscuit mix. Pancakes for dinner were a frequent, budget-friendly choice, costing just a dollar a box.
Now, as I buy ingredients for the same stew I used to make, it’s incredible to see how far I’ve come. The ingredients are better, but it’s still made with all the love and care that went into those meals back then. Despite all the struggle, I always made sure my siblings, cousins, and the rest of the family never went to bed hungry. It brings tears to my eyes now when my sister brings up those old soups, saying they were her favorite, and how those nights cuddling with mini pancakes and homemade syrup were some of her best memories. She remembers how I kept the house clean, we played PS3 games on snowy days, and how the house smelled like Christmas from my simmer pots.
It’s incredible how life works out, isn’t it? From those challenging times to where I am now, I’m just so thankful for the journey and how far I’ve come. I hope I never have to struggle like we did back then, and more importantly, I hope my son will never see that kind of hardship. It’s the reason I work so hard every day.
