🔥 Preheat oven to 350 degrees

In a mixing bowl add 3 eggs, cake mix, vanilla pudding mix, 1/2 cup butter melted and 1 cup pineapple juice. Mix everything together. The batter will be thick.

Next melt 6 tablespoons of butter.

Then add 8 tablespoons of brown sugar to the melted butter and mix.

Add the butter and brown sugar mix to the bottom of each muffin cup.

Place a slice of pineapple into each cup. You may have to cut the pineapple down some to make it fit.

Add a maraschino cherry in the middle of each pineapple.

Pour cake batter into each muffin cup about 1/2 to 2/3 full. Bake at 350 F for 25 minutes or until a toothpick comes out clean.

After the mini pineapple upside down cakes come out of the oven, you'll want to let them cool in the pan for about 5 minutes. Then put a cookie sheet or pan on top and flip it over so the mini upside down cakes come out onto the pan and Munch!

... Read moreMaking mini pineapple upside down cakes is a delightful way to enjoy a classic dessert with a fun and individual twist. Using a jumbo muffin pan not only helps create perfectly portioned servings but also makes these cakes ideal for parties or as a quick snack to brighten your day. One tip I've found useful is to ensure the pineapple slices fit snugly in the muffin cups. You might need to trim them slightly, but this helps produce a neat top once flipped out of the pan. The combination of brown sugar and melted butter forms that signature luscious caramel base, so don’t be tempted to skimp on these for better flavor and texture. Adding the maraschino cherry in the middle of each pineapple slice not only adds a pop of color but also complements the tropical sweetness. I also like to experiment with adding a little coconut extract to the batter to enhance the tropical vibe. When mixing the batter, the use of vanilla pudding mix is a secret ingredient that keeps the cakes moist and tender. Pineapple juice adds extra flavor and moisture, making the cake richer without needing heavy cream or additional fat. After baking, letting the cakes cool in the pan briefly before flipping them prevents the caramel topping from sticking, ensuring a beautiful presentation. Personally, I enjoy serving these with a dollop of whipped cream or a scoop of vanilla ice cream, which pairs perfectly with the warm, fruity cakes. This recipe is versatile and forgiving, making it perfect for beginner bakers or anyone looking to impress with a quick, tropical dessert. Plus, you can customize it by adding chopped nuts like pecans to the caramel mixture for extra crunch or swap cherries for fresh berries if you prefer. Overall, these mini pineapple upside down cakes bring the charm of a retro favorite into a convenient, shareable format that's sure to become a staple in your baking repertoire.
