Cookie Dough Cheesecake Bars
INGREDIENTS
33 Ounces cookie dough
16 Ounces cream cheese softened
1/2 Cup granulated sugar
2 Tbsp vanilla extract
2 eggs
DIRECTIONS
🔥Preheat oven to 350 degrees.
Spray a 9x13 casserole dish. Press two-thirds of your cookie dough firmly and evenly into the bottom of your prepared 9x13 pan.
Mix your softened cream cheese, sugar, vanilla extract and eggs in a large bowl until smooth.
Pour the cream cheese filling over the cookie dough base and spread it to the edges.
Flatten small pieces of the remaining cookie dough in your hands and lay them gently across the top of the cheesecake layer. (It will not cover the cheesecake completely; the filling will peek through).
🔥Bake at 350 degrees for 35 to 40 minutes. The edges should be golden brown, and the center should only have a slight, uniform jiggle.
Let the pan sit at room temperature for 1 hour.
Place the pan in the refrigerator for at least 2 to 3 hours before slicing. Chilling is mandatory to let the cheesecake layer set firmly. Slice and Munch!
If you’re a fan of combining classic desserts, cookie dough cheesecake bars are a delightful treat you’ll want to try at home. From personal experience, the key to getting the perfect texture is using high-quality cream cheese and ensuring it’s well softened to blend smoothly with the sugar, eggs, and vanilla extract. This creates that luscious cheesecake layer that beautifully contrasts with the cookie dough. When working with the cookie dough, pressing two-thirds into the casserole dish as a base helps create a sturdy but tender foundation, which is crucial as it holds the creamy cheesecake layer. I recommend chilling store-bought cookie dough slightly before pressing it in, as this makes it easier to handle and prevents the dough from sticking too much to your hands or the pan. One tip I found helpful is to gently flatten the small pieces of cookie dough on top by hand rather than using a tool. This way, the cookie dough partially covers the cheesecake layer, allowing that classic creamy filling to peek through and bake evenly. Baking at 350 degrees for just the right amount of time—about 35 to 40 minutes—ensures the edges turn golden brown while the center maintains a slight jiggle, signaling perfect doneness without overbaking. After baking, patience plays an important role for this dessert. Allowing the pan to sit at room temperature followed by refrigerating it for at least 2 to 3 hours sets the cheesecake firmly. This chilling step is mandatory to ensure clean slices and the perfect balance of creamy and chewy textures when serving. For a personal twist, I sometimes add a handful of chocolate chips or chopped nuts into the cookie dough base or sprinkle some on top before baking, which adds a pleasant crunch and richness. These bars are great for casual gatherings or as a special treat to make ahead of time. Overall, this cookie dough cheesecake bars recipe is an easy yet impressive dessert combining the best of cookie dough and cheesecake worlds. It’s perfect for those who love a rich, indulgent dessert with a combination of textures and flavors that keep you coming back for more.
