My New Year’s resolution for this year was to eat healthier and clean. I love Mediterranean food so this is my take on a Greek salad but with quinoa instead of lettuce. Enjoy.🍋
-cook your quinoa first I cooked about 2 cups of quinoa so that I could have some for leftovers
-Grilled two chicken breast I grilled two big chicken breast because I was cooking for four people
-Chop up some cucumbers I did it in a small dice and chop up some grape tomatoes just half wise
-In a separate pan sauté some small diced onions some garlic add some salt and pepper then add chopped up pieces of bacon. Sauté until the bacon is almost crisp.
-Add your quinoa to a large pan with your sautéed aromatics
-Chop your chicken into small pieces and add to your quinoa
-Chop up some banana, pepper rings and Kalamata sliced olives to toss everything together
-use salt and pepper to season
-After you have mixed everything together, add your chopped cucumbers and tomatoes to the top of your skillet. Top off with feta cheese and drizzle with Taziki sauce.
