Spicy Chili Garlic Eggs
🍳 Ingredients (Serves 2)
4 large eggs
1 tbsp vegetable oil
1 tbsp sesame oil (optional, for extra flavor)
4 cloves garlic, finely sliced or minced
1–2 tsp red chili flakes (adjust to heat level)
1 tbsp soy sauce
1 tsp rice vinegar or lime juice
1 tsp sugar (optional, to balance heat)
1 scallion, chopped (for garnish)
Cooked rice or toasted bread, for serving
🧭 Directions
Heat vegetable oil in a nonstick skillet over medium-high heat. Add garlic and sauté until lightly golden and fragrant—be careful not to burn it.
Lower the heat slightly and add red chili flakes to the garlic oil, stirring for a few seconds to bloom the spice.
Crack in the eggs carefully and fry until whites are set and edges are crispy, while yolks remain runny or cooked to your liking.
Drizzle soy sauce and a splash of rice vinegar directly over the eggs in the pan.
Sprinkle sugar if using, and let it slightly caramelize for about 20 seconds.
Turn off heat and spoon some of the garlic-chili oil over the eggs.
Serve hot over steamed rice or crispy toast, garnished with scallions.
