Ingredients

🐟2 lbs fish (cat fish, snapper, sea bass, or salmon)

🐟 3 tbsp fish sauce

🐟 2 tbsp honey

🐟 1 tbsp garlic powder

🐟 1 tsp salt

🐟 1/2 tsp black pepper

For Serving

🌿 Rice paper

🌿 Rice vermicelli noodles

🌿 Green leaf lettuce

🌿 Vietnamese herbs (mint, Thai basil, cilantro, perilla if available)

🌿 Cucumber slices

🌿 Pickled carrots & daikon

🌿 Scallion oil

🌿 Crushed roasted peanuts

🌿 Nước chấm (Vietnamese dipping sauce)

Directions

1. Mix all marinade ingredients and coat the fish well. Marinate for at least 30 minutes (overnight is even better).

2. Bake at 425°F for 18–22 minutes, depending on the thickness of the fish.

3. Broil for the last 2–3 minutes until the top is beautifully golden with slightly crispy edges.

4. Brush with scallion oil immediately after baking and sprinkle with roasted peanuts.

5. Build your wraps with rice paper, lettuce, noodles, herbs, vegetables, and flaky fish. Dip into nước chấm and enjoy every bite.
