Easy Summer Recipe The Best Pasta Salad
Now that the warm weather is approaching This super easy and delicious pasta salad will be on repeat at my house. This salad has pasta, cherry tomatoes, fresh mozzarella, artichoke hearts, kalamata olives, arugula, a few more ingredients and all tossed in a delicious creamy Homemade Italian Dressing.
—Ingredients—
1 pound of pasta of choice
Arugula (as much as you want)
8oz cherry tomatoes (cut in half)
1 small red onion (sliced)
15.5oz can chickpeas (drained and rinsed)
2 cups Artichokes hearts (cut in fourths)
1 cup Kalamata olives (cut in half)
1 12oz jar of roasted red peppers (chopped)
8oz fresh mozzarella cheese (chopped)
1/2 cup fresh parsley (chopped)
—Creamy Italian Dressing—
1 cup mayonnaise
1/4 cup rice vinegar
1/4 cup lemon juice
1/2 cup extra virgin olive oil
1 clove of garlic minced
2 tablespoons Dijon mustard
2 tablespoons honey
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon chili flakes
1/2 teaspoon black pepper
1/2 teaspoon salt or to taste
1. Make the dressing first by combining all the ingredients together in a mason jar, close the lid and shake well until creamy. Leave at room temperature for the flavors to marry until you prep the rest of the ingredients.
2. Cook the pasta according to the packet instructions. Chop and prepare the rest of the ingredients make sure you Drain and rinse the chickpeas.
3. Put the cooked pasta, arugula, tomatoes, onions, chickpeas, artichokes, olives, roasted red pepper, mozzarella and chopped parsley in a large bowl.
4. Pour the dressing over, toss well until everything is coated in the dressing and enjoy!
