Easy summer salad Creamy herb potato salad

This Creamy herb potato salad is a must try. It’s really simple to make with just a few ingredients you probably already have at home.

—Ingredients—

2 pounds of baby potatoes

1 small red onion

2 stalks of celery

Dill (1 bunch)

Parsley (half bunch)

1 cup mayonnaise

2 heaping tablespoons plain Greek yogurt or sour cream

2 tablespoons Dijon mustard

2 tablespoons sweet relish

The juice of half a lemon

1 teaspoon salt (or to taste)

1 teaspoon black pepper (or to taste)

:

1. Boil the potatoes until fork tender it should take about 25 minutes. Then strain and rinse with cold water. Cut them in half.

2. Cut all the veggies into bite size pieces, and chop the herbs.

3. make the creamy sauce by combining together the mayonnaise, yogurt, mustard, relish, lemon juice, salt and black pepper.

4. Next toss all the photos, veggies and herbs in the sauce and enjoy.
