Peanut Butter Chocolate Covered Dates

The perfect little sweet treat!! I love dates I eat them on a daily basis, But my kids love the chocolate covered ones, so I make them often.

—Ingredients—

12 medjool dates

1/4 cup peanut butter

Salted Roasted Peanuts

1 cup chocolate chips

1 teaspoon coconut oil

1. Using a knife, make an opening on the dates without slicing them all the way through. Remove the pit and stuff the cavities with peanut butter and whole roasted peanuts. I used 2 peanuts in each date.

2. Place the chocolate chips in a microwave safe bowl. Add in 1 teaspoon coconut oil. Place in the microwave for 30 seconds remove stir, and place back in the microwave for another 30 seconds, take it out stir again, and lastly microwave again for 15 seconds. Stir very well until chocolate completely melted and smooth.

3. Dip the peanut butter filled dates in the melted chocolate. Fully coat the date, pull it out of the chocolate, and let any extra drip off. Place carefully on a tray lined with parchment paper.

4. Sprinkle on the crushed salted peanuts before the chocolate hardens.

5. Place the dates in the fridge or leave at room temperature and allow the chocolate to set and enjoy.
