—Ingredients—

3 cups shredded chicken homemade or store bought

1 red bell pepper finely diced

1 small red onion finely diced

2 stalks of celery finely diced

1/3 cup of finely chopped cilantro

1/2 cup of mayonnaise

1/3 cup plain Greek yogurt

1 chipotle pepper in adobo sauce finely chopped (from can)

3 tablespoons adobo sauce (from the same can)

1/4 cup lime juice

1 teaspoon garlic powder

1/8 teaspoon cumin

1/8 teaspoon salt

1. Start by shredding your chicken breast. I used a rotisserie chicken to keep it simple but you can also cook chicken at home and shred. Dice and chop all the veggies.

2. In a bowl combine all the ingredients for the dressing. The mayo, Greek yogurt, chipotle pepper and sauce, lime juice, garlic powder, cumin, salt and mix.

3. Toss the salad- add the chicken, bell pepper, celery, red onion and cilantro to the dressing and toss well to combine.
