5 tablespoons unsalted butter
1 tablespoon olive oil
1 large onion diced
5 cloves garlic minced
1 tablespoon chicken bouillon powder
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
1 can diced tomatoes and green chilies (10oz)
1 can black beans drained and rinsed (15.5oz)
1 can red kidney beans drained and rinsed (15.5oz)
2 cups corn frozen or fresh
1 can unsweetened coconut milk (13.66oz)
1 cup heavy cream
1 QT chicken broth (32oz)
4 cups shredded rotisserie chicken
2 tablespoons lime juice
3 tablespoons chopped cilantro
1. Put a large saucepan or Dutch oven on medium-high heat. Add in the butter and oil, wait for the butter to melt.
2. Add in the diced onions and garlic and sauté for 3-4 minutes.
3. Next stir in all the seasonings and cook for 30 seconds.
4. Then add in the diced tomatoes and green chilies, black beans, kidney beans, corn, coconut milk, heavy cream, chicken broth and stir everything together.
5. Next add in the shredded chicken, stir well, cover and simmer on medium- low heat for about 20-25 minutes.
6. Lastly Stir in the lime juice and cilantro. Serve and enjoy.
