Green bean stew with chicken

Today for dinner I made green bean stew with chicken breast instead of red meat like lamb or beef. I like adding chicken sometimes my kids love it and it’s nice to change it up a little bit. You can also make the stew meatless.

... Read moreI've always loved how versatile and comforting a good stew can be, and this green bean and chicken stew is one of my absolute favorites! Beyond just being delicious, I've found so many ways to adapt it to fit different tastes and dietary needs. For those looking to make it even healthier, consider using a low-sodium chicken or vegetable broth. You can also boost the veggie content by tossing in some diced carrots or potatoes along with the green beans – they add extra nutrients and heartiness, almost turning it into a 'hearty chicken and vegetable' kind of dish, just like those wholesome soups we love. Speaking of green beans, did you know they're often called French beans? They're fantastic for this type of stew, holding their shape well and absorbing all those wonderful flavors. If you're out of fresh green beans, frozen ones work perfectly fine too; just add them directly to the pot without thawing. This makes it super convenient for any quick 'chicken breast and beans recipe' craving! One thing I really appreciate about using chicken breast in this recipe is how lean it is, making it a lighter option compared to red meat, yet still incredibly satisfying. To keep the chicken tender and juicy, resist the urge to overcook it. The initial 5-minute sear and then the 20-minute simmer with the stew are usually just right. If you prefer a richer flavor, boneless, skinless chicken thighs can also be a great substitute, though they'll add a bit more fat. This is truly a versatile 'chicken dish' that can be tweaked to your liking. This stew is incredibly adaptable. Want a little extra kick? A pinch of red pepper flakes with the jalapeño can really warm things up, or you can even add a touch of cayenne. For a milder version, simply omit the jalapeño entirely. If you don't have Roma tomatoes, any diced fresh tomato will do, or even a can of diced tomatoes (drain them first!). And if you're looking to make this stew truly vegetarian or vegan, simply skip the chicken, use vegetable broth, and maybe add some chickpeas or white beans for protein. It’s still incredibly delicious and satisfying as a 'green beans stew' on its own! A fantastic bonus? This stew tastes even better the next day, making it perfect for meal prep throughout the week. I often make a big batch on Sunday and enjoy it for lunch or dinner for a few days. It also freezes beautifully – just cool completely, portion into freezer-safe containers, and it'll last for up to 3 months. When you're ready to eat, thaw it overnight in the fridge and reheat gently on the stovetop. This makes it a super practical 'chicken and beans stew' for busy lifestyles. I often get asked about serving suggestions. While white rice is a classic pairing, I sometimes enjoy it with crusty bread for dipping, or even over quinoa for an extra protein boost. For a truly authentic touch, I’ve learned that this style of stew, often known as 'Matfenya Lobeeka Kesk' in some regions, carries a rich history and is frequently enjoyed with specific types of flatbread. It really speaks to the diverse culinary traditions that inspire dishes like this. I hope these extra tips help you personalize this green bean and chicken stew to become a cherished staple in your kitchen too!
