One Pan Seared Shrimp In a Garlic, Tomato Olive Sauce
It’s quick, easy, and packed with flavor! The best part? You only need one pan! Start by searing the shrimp until they're perfectly golden. —Ingredients—
2 pounds raw shrimp
1.5 teaspoon salt (all together, 1 for shrimp and 1/2 for sauce)
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon oregano
1.5 teaspoon black pepper (all together, 1 for shrimp and 1/2 for sauce)
1/4 cup extra virgin olive oil
2 tablespoons butter
1 large shallot sliced
5 cloves garlic sliced
1 pound cherry tomatoes halved
1 cup green pitted olives sliced (or Kalamata olives)
1/2 teaspoon chili flakes or to taste
The zest of 1 lemon
The juice of half a lemon
1/2 cup chopped parsley (reserve a little for garnish)
1. Clean, devein the shrimp and place in a large bowl then pat dry with paper towel.
2. Season the shrimp with 1 teaspoon each salt, garlic powder, paprika, oregano and black pepper.
3. Place a large pan on medium-high heat. Add olive oil then the shrimp in 2 batches. Cook the shrimp for 1-2 minutes per side until pink and remove from pan.
4. To that same pan add in the butter, the shallots and garlic. Sauté for about 2 minutes until fragrant. Next add in the tomatoes and olives, stir and cook for about 5 minutes until the tomatoes are softened and release some of their juices.
5. Season the tomato mixture with 1/2 teaspoon each salt, black pepper, chili flakes, the zest of one lemon and juice of half a lemon, Stir again!
6. Return the cooked shrimp back to the pan with all the juices and add the chopped parsley. Give everything a good toss and simmer for about 4-5 minutes until the shrimp are heated through.
7. Garnish with more parsley when serving. Serve over rice, pasta or with some crunchy bread and enjoy!
