Ramadan day 21 ✨🌙 / Newroz Kurdish new year part 1

Ramadan day 21 ✨🌙 and also a very special day for all us Kurds, Today is Newroz! Cejna Newroza la wa Hama Piroz bit. Newroz marks the Kurdish new year and the arrival of spring, Newroz means “new day” In honor of newroz I made some delicious Naana Gejnija, Kurdish Coriander Naan and for the first time I did a voice over in Kurdish ☺️🙈. If you're interested in trying out the recipe, I've included all the details below. Let’s celebrate these wonderful occasions together through food and tradition!

——Ingredients for the dough——

6 cups flour

1 tablespoon yeast

1 tablespoon salt

2 and 1/3 cup of warm water

——Ingredients for the filling——

1 cup of olive oil

3 large onions (diced really small)

2 Roma tomatoes

1 tablespoon vegeta seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon chili flakes

1/4 cup coriander seeds (grind in a mortar and pestle or a coffee grinder)

1 6oz can-of tomato paste

More olive oil for drizzle on the dough when rolling it out

1. Start by making the dough—combine all ingredients in a bowl of a stand mixer and mix until a dough forms, which should take about 10 minutes. Form the dough into a large ball, Drizzle a little bit of olive oil in the ball and return the dough back in.

2. Cover the bowl with plastic wrap and a towel, allowing the dough to rise for about an hour or until it doubles in size. Then form the dough into 6 equal size balls and cover again while you work on the gejnij (coriander onion filling).

3. Grind the coriander, and dice all the onions and chop the tomatoes.

4. Put a pan on medium-high heat, add the olive oil and wait for the oil to get hot, Then add in the onions and let the onions cook for about 10 minutes. Next add in the tomatoes and all the seasonings. Give it a good mix and let it cook for a couple more minutes.

5. Lastly, mix in the tomato paste, cook for another five minutes and the filling is done.

6. Preheat your oven to 475°F. Line your trays with parchment paper.

7. Depending on the size of your tray, put two dough balls a time in the tray, drizzle some olive oil on top of each one. Roll out the dough either with your fingers or a rolling pen into a circle or an oval.

8. Spread some of the filling evenly on top, make sure to cover it generously for maximum flavor.

9. Now it's time to bake! Bake in the preheated oven for about 20 minutes until the bottom and edges turn golden and enjoy!
