——Cake Ingredients——
4 eggs
1 cup granulated sugar
1 cup vegetable oil
1 15oz can pumpkin purée
1 tablespoon vanilla extract
2 cups flour (unbleached all-purpose I use King Arthur)
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon pumpkin spice
——Cream Cheese Frosting——
1 stick unsalted butter room temperature
1 block cream cheese 8oz room temperature
4 cups powdered sugar
1/4 cup heavy cream
1/2 teaspoon vanilla extract
——Garnish——
Candied or regular pecans chopped
1. Preheat your oven to 350°F. Prep two 9” round cake pans by spraying with cooking spray and lining the bottom with parchment paper.
2. In a large bowl add in pumpkin purée, crack in 4 eggs, add in sugar, oil, vanilla extract, and whisk until well combined.
3. Add in the flour, baking powder, baking soda, salt, cinnamon, pumpkin spice and whisk until completely combined and no lumps.
4. Divide the batter evenly into the prepared pans. Tap the pans on the counter to release any air bubbles. Bake until a toothpick inserted into the center comes out clean, about 25-30 minutes.
5. Remove the cakes from the oven, Cool in the pan for 10 minutes. Remove from pan and cool completely.
6. Make the frosting— In a large bowl using a handheld or stand mixer fitted with a whisk attachment, place cream cheese and butter into a mixing bowl and mix on a medium-high speed until smooth. Next pour in the heavy cream, vanilla extract and mix. Scrape the bowl with a rubber spatula as needed throughout this process. Mix until combined and smooth.
7. Add in the powdered sugar, mix on low at first to avoid powdered sugar explosions. Increase the speed to medium-high once the powdered sugar is incorporated, and mix for about 1-2 minutes until stiff peaks form.
8. Assemble the cake, Place a dollop of frosting on your cake plate or stand and place the bottom layer of cake on top of that.
9. Add a generous amount of the frosting on top of the cake and spread evenly with a spatula. Place the next layer on top. Add the remaining frosting on top and spread evenly. Garnish with pecans and Enjoy! #lemon8partner #pumpkincake #fallvibes🍁
This pumpkin cake recipe is a fantastic way to celebrate autumn flavors with the perfect balance between spice and sweetness. Using canned pumpkin purée ensures moisture and authenticity in every bite. When selecting your spices, consider adding fresh nutmeg or a pinch of cloves in addition to the pumpkin spice mix to deepen the aroma and complexity of the cake. For an even richer texture, substitute half of the vegetable oil with applesauce—this alteration maintains moisture while adding a subtle fruity undertone. The cream cheese frosting elevates this dessert with its smooth creaminess and slight tang. Using room temperature cream cheese and butter ensures a velvety texture that whips up beautifully, incorporating heavy cream to achieve just the right consistency for easy spreading. To make the frosting extra special, a sprinkle of cinnamon or a drizzle of maple syrup can be folded in for a unique twist. When assembling the cake, chilling the layers briefly before frosting helps prevent crumbs from mixing into the icing, ensuring a clean, elegant finish. Garnishing with candied pecans not only provides a delightful crunch but also complements the warm spices of the cake perfectly—if desired, you can toast pecans with a sprinkle of brown sugar and a dash of cinnamon for extra flavor. This cake works wonderfully for celebrations like Thanksgiving or any fall-themed event. It pairs exquisitely with a cup of hot apple cider or spiced tea, making it an inviting dessert that warms both the body and spirit. For those interested in healthier options, try using whole wheat flour instead of all-purpose flour to add fiber and a subtle nuttiness without sacrificing the fluffy texture. Whether you’re a seasoned baker or a beginner, this pumpkin cake recipe is approachable, making it a dependable choice for your fall dessert repertoire.
