Pumpkin Cake with A Cream Cheese Frosting Part 2

This amazing pumpkin cake is super moist and incredibly easy to make, packed with delightful spiced pumpkin goodness. It’s the kind of dessert that brings warmth and comfort to any gathering. To elevate this cake even further, it’s topped with a luscious cream cheese frosting. Trust me, this frosting takes the cake to another level of deliciousness!

——Cake Ingredients——

4 eggs

1 cup granulated sugar

1 cup vegetable oil

1 15oz can pumpkin purée

1 tablespoon vanilla extract

2 cups flour (unbleached all-purpose I use King Arthur)

2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1 teaspoon pumpkin spice

——Cream Cheese Frosting——

1 stick unsalted butter room temperature

1 block cream cheese 8oz room temperature

4 cups powdered sugar

1/4 cup heavy cream

1/2 teaspoon vanilla extract

——Garnish——

Candied or regular pecans chopped

1. Preheat your oven to 350°F. Prep two 9” round cake pans by spraying with cooking spray and lining the bottom with parchment paper.

2. In a large bowl add in pumpkin purée, crack in 4 eggs, add in sugar, oil, vanilla extract, and whisk until well combined.

3. Add in the flour, baking powder, baking soda, salt, cinnamon, pumpkin spice and whisk until completely combined and no lumps.

4. Divide the batter evenly into the prepared pans. Tap the pans on the counter to release any air bubbles. Bake until a toothpick inserted into the center comes out clean, about 25-30 minutes.

5. Remove the cakes from the oven, Cool in the pan for 10 minutes. Remove from pan and cool completely.

6. Make the frosting— In a large bowl using a handheld or stand mixer fitted with a whisk attachment, place cream cheese and butter into a mixing bowl and mix on a medium-high speed until smooth. Next pour in the heavy cream, vanilla extract and mix. Scrape the bowl with a rubber spatula as needed throughout this process. Mix until combined and smooth.

7. Add in the powdered sugar, mix on low at first to avoid powdered sugar explosions. Increase the speed to medium-high once the powdered sugar is incorporated, and mix for about 1-2 minutes until stiff peaks form.

8. Assemble the cake, Place a dollop of frosting on your cake plate or stand and place the bottom layer of cake on top of that.

9. Add a generous amount of the frosting on top of the cake and spread evenly with a spatula. Place the next layer on top. Add the remaining frosting on top and spread evenly. Garnish with pecans and Enjoy!
