Chicken Gnocchi Soup

The ultimate cozy bowl for those chilly days!

It’s rich, comforting, and comes together in no time. I used rotisserie chicken to keep things simple, but if you’ve got the time, homemade works beautifully too.

——Ingredients——

1 rotisserie chicken diced small or shredded

4 tablespoons unsalted butter

1 medium onion diced

3 carrots peeled and diced

3 celery stalks diced

4 cloves garlic minced

2 teaspoons chicken bouillon powder

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon garlic powder

1/4 cup flour

4 cups chicken stock or broth

1 tablespoon fresh thyme

1 cup heavy cream

1 cup milk

1 package potato gnocchi (16oz)

1/2 cup grated Parmesan cheese

1 pound spinach

1. In a large Dutch oven or pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté for about 5 minutes until softened.

2. Stir in the garlic and seasonings, cooking for another minute until fragrant.

3. Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes, until the flour turns a light golden color.

4. Gradually pour in the chicken stock while stirring to prevent lumps. Add the fresh thyme and diced chicken, stir to combine, then cover and bring to a gentle boil.

5. Stir in the heavy cream, milk, and gnocchi. Continue cooking for 5–10 minutes, stirring often, until the gnocchi floats to the top and the soup starts to thicken.

6. Reduce the heat to low and stir in the grated Parmesan and spinach. Simmer for about 1 minute, until the spinach is wilted.

7. Serve warm with extra Parmesan on top — and enjoy every cozy, creamy bite!
