Easy Weeknight Dinner Spaghetti & Meat Sauce

My go-to easy weeknight dinner—simple, comforting, and always reliable. A pot of spaghetti with a rich meat sauce simmering on the stove feels like home, especially on busy days when you just want something warm and satisfying without overthinking it. It’s the kind of meal that brings everyone to the table, no fuss, just good food made with love 🍝

—Ingredients—

1.5 lbs ground beef

1 large onion, diced

1 red bell pepper, diced

4 cloves garlic, minced

2 tbsp Worcestershire sauce

1 tbsp chicken bouillon powder

1 tbsp Italian seasoning

1 tbsp garlic powder

1 tbsp onion powder

1 tsp black pepper

½ tsp chili flakes (or to taste)

2 jars pasta sauce (25 oz each)

½ tsp salt (adjust to taste)

Spaghetti, cooked according to package instructions

—Toppings—

Shredded mozzarella cheese

Chopped parsley

1. In a large pot or deep skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks.

2. Add the diced onion, red bell pepper and minced garlic to the beef. Sauté for 5–7 minutes, until softened and fragrant.

3. Add Worcestershire sauce, chicken bouillon powder, Italian seasoning, garlic powder, onion powder, black pepper, chili flakes, and salt. Stir well to combine.

4. Pour in both jars of pasta sauce. Stir, reduce heat to low, and let the sauce simmer for 1 hour, stirring occasionally. Taste and adjust seasoning if needed.

5. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions. Drain and set aside.

6. Serve the sauce spooned over the pasta, or Add the cooked spaghetti to the sauce and toss until fully coated.

7. Finish with shredded mozzarella and chopped parsley. Serve warm and enjoy.

... Read moreI’ve made this spaghetti and meat sauce recipe many times when my schedule gets hectic, and it never disappoints. One tip I've found helpful is to prepare the meat sauce a day ahead when possible—letting it sit overnight actually intensifies the flavors, making it even more delicious the next day. If you want to save even more time, try using pre-chopped onions and bell peppers or even frozen diced vegetables. When simmering the sauce, be sure to stir occasionally to prevent it from sticking to the pot and burning. The combination of Worcestershire sauce and chicken bouillon powder adds a wonderful depth to the sauce, giving it that savory umami punch that makes it feel homemade and hearty. For a personal touch, I sometimes add a splash of red wine while the sauce simmers, which adds richness without overpowering the other flavors. If you like a bit more spice, increasing the chili flakes or adding a pinch of smoked paprika can give a subtle smoky heat. Serving this over spaghetti noodles works great, but you can also swap in other pasta shapes like rigatoni or penne, which hold the meat sauce well. For toppings, shredded mozzarella and fresh parsley are classic and fresh, but I also enjoy a sprinkle of grated Parmesan or a dollop of ricotta cheese for creaminess. This meal is fantastic for family dinners or meal prep lunches because it stores well and reheats beautifully. Pair it with a simple side salad or garlic bread for a complete, satisfying dinner that feels like it took much longer than it actually did. Plus, the whole family usually asks for seconds!
