Orange Sauce chicken and rice

One of my favorite quick and easy low-prep meals in under 30 minutes! This recipe is low effort, delicious, and a nice way to eat vegetables and protein.

Ingredients:

- A bottle of Panda Express orange sauce

- bag of stir fry vegetables or California blend

- 1-2 chicken breast

- box of brown microwave rice

- soy sauce

- salt

-pepper

-paprika

-red pepper flakes

- optional- diced bell pepper and onion

Instructions:

1. Line a baking sheet with foil

2. Preheat oven to 400°F

3. Cut chicken into bite-sized pieces and put on one side of baking sheet

4. Add vegetables to the other side of the baking sheet

5. Season everything with seasonings

6. Dump orange sauce over top of vegetables and chicken (I like to leave some sauce in the bottle in case I want to add extra sauce later on)

7. Bake for 20-25 minutes or until chicken is cooked

8. Microwave rice according to package instructions (I do 2 cups brown rice with 1 3/4 cup water cooked for 9 minutes)

9. Add some soy sauce to to rice and fluff with a fork mixing everything

Sometimes when I’m feeling ambitious I will make fried rice on the stove but if I’m short on ingredients and time I will just make rice with some soy sauce and it’s still delicious. I tend to use a bag of frozen stir-fry vegetables or the frozen broccoli, cauliflower, and carrot blend. You can use fresh vegetables if you prefer. There’s also the option to slice up some fresh onion and bell pepper and add it to whatever veggies you like. I usually make 1 or two medium to large chicken breasts with one bottle of sauce and one bag of vegetables but this recipe is very simple to increase. I don’t measure the seasonings I just dump them on to my liking. The orange chicken sauce and pepper flakes can be spicy so beware!
