And after making my latest batch of loaded steak and shrimp cheese fries, I just had to share some extra tips and tricks to elevate your homemade experience! Making the perfect loaded fries starts with the base. While store-bought frozen fries are super convenient, if you have time, cutting your own russet potatoes into thin, crispy fries makes a huge difference. My secret to extra crispy fries? A double fry method! Fry them once at a lower temperature (around 300°F or 150°C) until tender, then again at a higher temperature (375°F or 190°C) until golden brown and super crunchy. Pat them dry thoroughly before frying for the best results. Now, let's talk about the stars of the show: the steak and shrimp. For the steak, I love using thinly sliced or diced steak, like skirt steak or sirloin. Marinating it for at least 30 minutes (or even overnight!) in a simple mix of soy sauce, lime juice, a hint of cumin, and garlic powder really tenderizes it and adds incredible depth. When cooking, get your pan super hot and sear the diced steak quickly to keep it juicy and prevent it from drying out. For the cooked shrimp, a quick sauté with a little butter and garlic is all you need. You want them just cooked through, plump, and tender – nobody likes rubbery shrimp! And what's loaded fries without the cheese? I usually go for a blend of Monterey Jack and cheddar because they melt beautifully and offer a great flavor. Sprinkle generously over the hot fries right after they come out of the fryer, then layer your steak and shrimp, and add more cheese! A quick pop under the broiler for a minute or two can help achieve that perfect, gooey melted cheese pull. Finally, the toppings are where you can really make these loaded fries your own. Beyond the classic chopped red onions and fresh cilantro—which are essential for that fresh, zesty kick—don't be afraid to experiment! I love adding a dollop of sour cream or a drizzle of homemade crema, some spicy pickled jalapeños for a little heat, and maybe even a scoop of fresh guacamole or pico de gallo. A dash of your favorite hot sauce or a smoky chipotle aioli really takes it to the next level. Sometimes, when I'm feeling a bit healthier or want to skip the fries, I'll even turn this into a "loaded steak bowl" by serving the steak, shrimp, cheese, and toppings over a bed of cilantro-lime rice or even a fresh salad. It’s a versatile dish that always hits the spot! Enjoy creating your own ultimate loaded fries!
