the fluffiest, most pillowy cinnamon roll recipe!

You found the PERFECT cinnamon roll recipe thanks to noir kitchen🧑🏾‍🍳🥨✨

After seeing his video on Instagram, I had to try it — and I will never go back. These are the fluffiest, most pillowy, most beautiful cinnamon rolls I’ve ever made!

Dough:

• 1 cup warm milk (113°F)

• 2 room-temperature eggs

• ⅓ cup melted margarine (I used butter)

• 4½ cups bread flour

• 1 tsp salt

• ½ cup sugar

• 2½ tsp dry yeast

Mix and knead until smooth and elastic.

Cover and let rise for 1 hour.

Filling:

• 1 cup brown sugar

• 1 stick softened butter

• 2–3 tbsp cinnamon

• 2 tbsp flour

Roll out the dough. Spread the butter, then top with the cinnamon-sugar mixture. Roll tightly, slice, and place on a baking tray.

Let rise again for 30 minutes.

Before baking:

Pour heavy whipping cream over the rolls.

Bake at 350°F for 30 minutes, or until golden brown.

Glaze:

• 1 stick butter

• 8 oz cream cheese

• 2 tbsp vanilla paste

• 4 tbsp powdered sugar

Spread the glaze over the rolls while they’re still slightly warm.

Soft. Sweet. Melt-in-your-mouth perfection. 🤍

... Read moreOkay, so you've seen my go-to recipe for the fluffiest, most pillowy cinnamon rolls, and trust me, it's a game-changer! But let's dive a little deeper into two crucial elements that truly make them stand out: using bread flour and getting that baking temperature just right. First, let's talk about bread flour. If you've ever wondered why your homemade cinnamon rolls weren't as airy or chewy as you hoped, the flour might be the culprit. I used to just grab whatever all-purpose flour was in my pantry, thinking 'flour is flour,' right? Wrong! Bread flour has a higher protein content (typically 12-14%) compared to all-purpose (10-12%). This higher protein level means more gluten development. And what does more gluten mean for cinnamon rolls? It translates to that incredible, elastic structure that allows the dough to rise beautifully, creating those signature fluffy layers that make them so irresistible. When I switched to bread flour, I immediately noticed a difference in how much easier the dough was to knead into a smooth, elastic ball, and the final texture was just divine – truly melt-in-your-mouth perfection. It gives your rolls that satisfying chewiness while still being incredibly soft. Don't skip this step; it's key to achieving those beautiful, professional-looking rolls. Now, onto possibly the most critical part of baking any triumphant pastry: the baking temperature. My recipe calls for 350°F (175°C) for 30 minutes, and I've found this to be the sweet spot for achieving perfectly golden-brown rolls without drying them out. I've had my share of baking mishaps – rolls that were pale and undercooked in the center, or worse, dark and crusty on the outside but still raw inside. It's all about balance! Baking at too high a temperature can cause the outside to brown too quickly before the inside has a chance to fully cook and become fluffy. Too low, and they might not rise properly and could end up dense. Here are a couple of my personal tricks for perfect baking: Preheat thoroughly: Always preheat your oven for at least 15-20 minutes after it reaches the target temperature. Ovens can fluctuate, and you want a consistent heat from the moment your rolls go in. Use an oven thermometer: This was a game-changer for me! My oven's display was often off by 25-50°F. A cheap oven thermometer can save you from many baking heartbreaks. Keep an eye on them: While 30 minutes is a good guide, all ovens are different. Start checking around 25 minutes. Look for a beautiful golden-brown color on top and around the edges. If they're browning too fast, you can loosely tent them with aluminum foil for the last 10-15 minutes. The heavy whipping cream trick: As mentioned in the recipe, pouring heavy whipping cream over the rolls right before baking is a simple yet brilliant hack. It creates a steamy environment, keeping the rolls incredibly moist and helping them achieve that ethereal, pillowy texture. Mastering the bread flour and the baking temperature will genuinely elevate your cinnamon roll game from good to absolutely unforgettable. Give these tips a try, and prepare to impress everyone (including yourself!) with your beautiful, bakery-worthy creations.
