Protein Pineapple Tacos

6 months post-op and still trying to eat like a normal person… but make it ✨bariatric friendly✨

Tonight’s accidental win:

Sweet + smoky pineapple chicken tacos 🍍🌮

Rotisserie chicken + fresh pineapple + peppers + onion

Sauce = soy sauce, honey, garlic, Sweet Preacher’s BBQ seasoning

Let it caramelize and get a little crispy 👏

Served in small tortillas with cilantro (could easily do this as a bowl!)

✔️ High protein

✔️ Big flavor

✔️ Doesn’t feel like “diet food”

Estimated macros (per 1 taco):

~120–140 calories

~12–15g protein

~10–12g carbs

~3–4g fat

(If you skip the tortilla and eat it as a bowl → even lower carbs + higher protein ratio)

This is your reminder that bariatric meals don’t have to be boring… sometimes you just throw things in a pan and trust the process 🙌

... Read moreAfter six months of post-op life, finding meals that feel satisfying and normal yet fit bariatric dietary needs can be a challenge. This protein pineapple taco recipe is a delightful example of how you can enjoy flavorful dishes without sacrificing your nutritional goals. Using rotisserie chicken as a base not only makes preparation quick but also ensures a high protein content essential for muscle maintenance and recovery after bariatric surgery. The combination of fresh pineapple, peppers, and onions introduces natural sweetness and crunch, while the soy sauce, honey, garlic, and Sweet Preacher's BBQ seasoning create a caramelized, smoky glaze that elevates the dish. One tip to further reduce carbs is to enjoy this as a bowl instead of using tortillas, which can lower carbs and increase the protein-to-carb ratio—an important consideration when managing blood sugar and promoting weight loss. When selecting tortillas, opt for street taco-sized ones, as indicated by the net weight on choices like Z0 68.8 NET WT. TORTILLAS STREET TACO. Smaller tortillas help control portion size and carb intake. From personal experience, keeping meals colorful and rich in texture helps me stay motivated and prevents feelings of restriction common on post-op diets. Plus, the method of letting the sauce caramelize into a crispy coating adds a gratifying bite that makes this meal feel indulgent despite being healthy. This recipe shows that bariatric meals don’t have to be bland or boring. By trusting simple flavor combinations and quality ingredients, you can enjoy your food and stay on track with your health goals. Don't hesitate to experiment with seasoning blends or add your favorite low-carb veggies to customize each taco or bowl to your taste.
