... Read moreTigrillo is a beloved Ecuadorian breakfast dish that combines the hearty flavors of green plantains and eggs, making it both satisfying and versatile. One of the keys to a delicious Tigrillo is choosing firm, green plantains, which provide the ideal texture when mashed and cooked. The sautéed cebollín (scallions) adds a mild onion flavor that complements the richness of the eggs and butter. In my experience, the use of both whole milk and cream adds a luscious creaminess to the dish, though you can adjust the quantities based on your preference. Adding extra eggs ensures a fluffy, well-bound mixture, helping the flavors meld perfectly. Cheese is an essential ingredient, and using a melting cheese of your choice contributes a savory, gooey finish. While chicharrón (fried pork rinds) is optional, it adds an irresistible crunch and depth of flavor that elevates the dish to a new level. If you prefer a vegetarian version, you can skip the chicharrón or substitute it with sautéed mushrooms or crispy fried onions. For serving, Tigrillo pairs wonderfully with fresh avocado slices and hot sauce to add brightness and a bit of heat. This dish is also wonderfully adaptable – you can enjoy it as a filling breakfast or a comforting lunch option. Leftovers reheat well and can be topped with a fried egg for an extra indulgent meal. Remember that seasoning is crucial; taste as you cook to ensure the dish is perfectly balanced with a hint of salt, the richness of butter, and the subtle sweetness of plantains. Preparing Tigrillo "a mi manera" (my way) allows for flexibility, so feel free to tweak the ingredients like adding more eggs or more cheese according to your taste preferences. This homemade Tigrillo recipe is an excellent way for anyone to explore traditional Ecuadorian flavors in a simple yet delightful way.
