Cajun Chicken Pasta 👩🍳💋
I don’t ever use exact measurements when I cook, because usually I’m just trying to use up what I have in my fridge!! So I’m sorry about that but just measure with your heart and what feels right :)
Ingredients
2 chicken breasts
Chicken stock
Cajun seasoning
Heavy whipping cream
Minced garlic
Red onion
Jalepeno (optional)
Cherry tomatoes (optional)
Tomato sauce
Pasta of your choice!
Parmesan
1. Preheat oven to 450 degrees
2. Melt butter and let cool for a couple minutes and then coat your chicken with the butter and Cajun seasoning (I used the Weber n’orleans cajun seasoning)
3. Put chicken in oven and start on your sauce
4. Add butter, garlic, red onion, jalapeños, and cherry tomatoes to your pan. Once the butter melts add enough chicken stock to cover the bottom of the pan, and then cover with lid
5. Cook pasta
6. Remove chicken and wrap it in foil until you’re done cooking your sauce
7. Add 1 jar tomato sauce(I only had 2/3 of jar but whatever you have will work), a splash of heavy whipping cream, and Parmesan. Let simmer!
8. Cut chicken and enjoy your pasta!!
Hey pasta lovers! This Cajun Chicken Pasta recipe is truly a staple in my kitchen, especially when I want something delicious but don't want to overthink it. You know I love to cook by feel, but I totally get that sometimes you need a little more guidance to make it perfect for your taste buds! Let's talk about that amazing Cajun sauce. The beauty of it is how adaptable it is. If you're wondering about the "Cajun seasoning" part, a good quality blend is key. I usually use a store-bought one for convenience, but you can absolutely make your own by mixing paprika, cayenne pepper (adjust for your desired "spicy pasta" level!), garlic powder, onion powder, dried oregano, and thyme. For the base, after sautéing your "minced garlic" and "red onion" (and those optional "jalapeños" for an extra kick!), you build it up. The "heavy whipping cream" is what gives it that luscious, creamy texture, so don't skimp on it! And the "tomato sauce" adds a fantastic depth and color. If you like it extra rich, a touch more "Parmesan" stirred in at the end makes all the difference. Sometimes, I even add a splash of white wine with the "chicken stock" to deglaze the pan and add another layer of flavor before the cream – trust me, it’s a game-changer! For those of you looking for "quick dinners with chicken breast," this recipe is a winner because you can really multitask. While your chicken is baking in the oven, that's your cue to start on the sauce and get your pasta cooking. Having all your ingredients prepped (chopped onions, garlic ready) before you even turn on the stove makes a huge difference in speed. And for the "meal prep pasta" crowd, this dish holds up surprisingly well! I often make a bigger batch and store individual portions in airtight containers. When reheating, I sometimes add a tiny splash of milk or chicken stock to bring back that creamy consistency, especially if the sauce has thickened too much overnight. It's perfect for a satisfying lunch or a quick dinner after a long day. Speaking of "spicy pasta," if you're like me and love heat, don't be shy with the cayenne in your Cajun seasoning or add an extra jalapeño. If you prefer it milder, reduce the cayenne or skip the jalapeño entirely. The "cherry tomatoes" burst when cooked and add a lovely sweetness that balances the spice beautifully. And don't forget a generous sprinkle of fresh "Parmesan shavings" on top for that perfect finish. This isn't just another "pasta idea for dinner"; it’s one that truly delivers on flavor with minimal fuss!
