Lentil soup
1 cup brown lentils
3 Potatoes, peeled and chopped
5 Carrots, sliced
Green bell pepper, chopped
Onion, diced
Garlic powder
Onion powder
Turmeric
Italian seasoning

ln a large pot, 3 tbsp of olive oil over medium heat.Add onion,bell pepper, potatoes, carrots.Cook about 3 minutes.
Season (with garlic powder, onion powder, turmeric, Italian seasoning, salt, and pepper)
Stir thoroughly to combine all the ingredients.
Add verdolaga (or spinach)
Add the cooked lentils and mix well.
Reduce the heat and let the soup simmer about 20 minutes, until all the vegetables are tender and the flavors are well combined.
Taste and adjust seasoning if needed. Serve warm.
