Sour dough bread

I used daysofkay recipe off of tik tok

This bread is sooo good

1.100g bubbly active starter

2.375g of filtered water

3.mix to get a milky water

4.add 600g UNBLEACHED flour

5.mix well you may need to use your hands

6. Cover your dough with a damn towel for 30 minutes

7.after the timer is up with wet finger tips begin your first set of of stretch and folds

8.use one hand as an anchor hand to stabilize the dough and another to gently stretch the dough up then fold it into itself

9.rotating the bowl with every stretch and fold so you do 4 of them the last two stretches will be more difficult as your a building tension in your dough

10. Let dough sit for another 30 minutes and repeat 4 more times

11.let it sit on your counter over night (first proof)

12.shape your dough and get it into the fridge for its second proof

13.After shaping place in a greased glass bowl or floured banneton basket and cover it with plastic wrap

place in the fridge for 12-24 hours

14. After your second proof in the fridge Score your dough and place on parchment paper

15. Place dough in Dutch oven and bake for 25 minutes with lid on and remove lid and bake for another 20

16. Remove sourdough from Dutch oven and place on cooling rack

17. Don’t cut your sourdough bread until cooled or moderately warm
