Garlic Butter Asparagus & Chinese Chicken Salad
✨ LIGHT & FLAVORFUL IRON-SUPPORTING DINNER ✨
Garlic-Butter Asparagus + Asian Sesame Chicken Salad
I created this dinner for those evenings when I want something light and fresh—but still satisfying, colorful and full of nutrients. The combination of seasoned chicken, leafy greens, asparagus and almonds provides protein, fiber and several natural sources of iron. The mandarin oranges add vitamin C, which helps the body absorb plant-based iron more efficiently.
🥗 ASIAN SESAME CHICKEN SALAD
Ingredients:
• 3–4 cups mixed greens and arugula
• 1 seasoned chicken breast, cooked and sliced
• ½ cup shredded carrots
• 1 celery stalk, thinly sliced
• ⅓ cup mandarin-orange segments
• ¼ cup crispy wonton strips
• 2 tablespoons sliced or slivered almonds
• 1–2 tablespoons Asian sesame dressing
• 1 teaspoon warm garlic butter
• Black pepper to taste
Directions:
1. Place the mixed greens and arugula in a large bowl.
2. Add the carrots, celery, mandarin oranges and seasoned chicken.
3. Sprinkle the wonton strips and slivered almonds over the top.
4. Add a small splash of warm garlic butter and toss gently. This gives the salad a rich, savory coating without drowning the greens.
5. Finish with a light drizzle of Asian sesame dressing and freshly ground black pepper.
The secret is using just enough garlic butter to coat the ingredients lightly. It adds flavor throughout the salad, so you don’t need a heavy amount of dressing.
🌿 GARLIC-BUTTER ASPARAGUS
Ingredients:
• 1 bunch fresh asparagus, trimmed
• 1–2 tablespoons salted butter
• 2–3 garlic cloves, minced
• ¼ teaspoon garlic powder
• Black pepper to taste
• Pinch of salt, only if needed
Directions:
1. Bring a pot of water to a boil.
2. Add the asparagus and blanch for approximately 2–3 minutes, just until it turns bright green and becomes slightly tender.
3. Immediately drain it. For an extra-crisp texture, place it briefly into a bowl of ice water, then pat completely dry.
4. Melt the salted butter in a skillet over medium heat.
5. Add the minced garlic and cook for approximately 30 seconds, just until fragrant.
6. Add the asparagus and sauté for 3–5 minutes, turning it until lightly seared and evenly coated.
7. Finish with garlic powder, black pepper and a small pinch of salt if necessary.
💚 WHY THIS DINNER WORKS
• Chicken supplies lean protein and some highly absorbable heme iron.
• Arugula, mixed greens, asparagus and almonds contribute plant-based iron and other nutrients.
• Mandarin oranges provide vitamin C, which supports the absorption of iron from the vegetables and almonds.
• Carrots and leafy greens bring antioxidants, fiber and color.
• The wonton strips provide the perfect crispy contrast.
• Lightly coating the salad with garlic butter and sesame dressing delivers plenty of flavor without making it overly heavy.
Fresh, savory, slightly sweet and full of texture—this is proof that a lighter dinner does not have to be boring or flavorless. 🥢🍊🌿

From my experience, combining ingredients that boost iron absorption naturally enhances both the nutritional value and taste of a meal. The addition of mandarin orange segments in this Asian sesame chicken salad is a smart way to increase vitamin C intake, which helps the body absorb iron from plant-based sources like arugula, mixed greens, and almonds more efficiently. I find this combination particularly refreshing for a lighter dinner option when I want to enjoy something colorful and satisfying without feeling weighed down. Garlic butter asparagus, when prepared by blanching and then sautéing with minced garlic, creates a bright, flavorful side that complements the freshness of the salad beautifully. The garlicky aroma and buttery richness add a delicious contrast to the crisp vegetables and the tender chicken. One tip I live by is to avoid overcooking the asparagus; blanching for just a couple of minutes keeps it tender yet crisp, locking in nutrients and an appealing texture. Another component that stands out is the crispy wonton strips sprinkled on top of the salad. They provide a delightful crunch that contrasts with the soft textures of the greens and chicken. Also, lightly coating the salad with warm garlic butter before adding the sesame dressing never fails to impress—this subtle layer of flavor enriches the salad without overwhelming the fresh vegetables. For anyone looking to create a balanced, iron-supporting meal that’s both easy to prepare and packed with flavor, this combination hits the mark. It’s also versatile; you can swap the chicken breast for tofu or tempeh to make the salad vegetarian while maintaining the iron-boosting benefits by focusing on the vitamin C-rich components and iron-packed greens. Whether for a weeknight dinner or a healthy lunch, this dish is a great way to enjoy a fresh, nutrient-dense meal that’s satisfying and delicious.
