🍽️ Sunday Dinner on a Wednesday: Butter-Seared Pot Roast

Who says you have to wait until Sunday for a real comfort-food dinner? I made a tender pot roast seared in butter, then slowly cooked it down with onions, bell peppers, potatoes, and rich homemade gravy. I removed the potatoes once they became tender so they wouldn’t fall apart, then let the roast continue cooking until the meat was fork-tender.

Ingredients:

* 3–4 lb chuck roast

* 2–3 tablespoons butter

* 1 large onion, sliced

* 1 bell pepper, sliced

* 4–5 potatoes, cut into chunks

* 2 cups beef broth

* 1 tablespoon Worcestershire sauce

* Garlic powder, onion powder, paprika, seasoned salt, and black pepper

* 2 tablespoons flour or cornstarch for thickening the gravy

Directions:

1. Season the roast generously on every side.

2. Melt the butter in a heavy pot and sear the roast until it develops a deep brown crust.

3. Add the onions and bell peppers, allowing them to soften and absorb all that buttery flavor.

4. Pour in the beef broth and Worcestershire sauce. Cover and simmer on low for approximately 3–4 hours.

5. Add the potatoes during the last 45–60 minutes. Remove them once tender, then continue cooking the meat until it pulls apart easily.

6. Thicken the remaining juices with flour or cornstarch to create a smooth, savory gravy.

While the roast was cooking, I boiled fluffy white rice and prepared garlic-butter green beans with tender chunks of potato. I served everything together and poured that rich pot-roast gravy right over the meat, rice, and potatoes.
