Healthy Shrimp Fajita Bowls🥑🦐

If it’s one thing about me…I love shrimp. & Mexican food. And easy meals.

So, I combined them into this healthy, delicious & EASY meal for two people.

What you will need📋

✔️olive oil

✔️12oz Frozen pre cooked shrimp, peeled & deveined (or fresh if you want!)

✔️1 packet Fajita seasoning

✔️2 cups instant White rice (or brown, whatever you want)

✔️1 Can of black beans

✔️half a bag of 20oz frozen pepper & onion blend (or fresh onions & bell peppers)

✔️ 1 Avocado

✔️1 lime

✔️Fresh cilantro

✔️Salsa

Now I’m gonna be really honest, when I cook, I eyeball EVERYTHING. So I’m gonna tell you how I made this for 2 people, but feel free to adjust it for the serving size you need.

Thaw shrimp & add to a pan of oil to cook on med heat. Once the shrimp looks like it’s close to being cooked I add about half the packet of fajita seasoning & continue to pan sear it & get some nice char on it.

Remove shrimp, add more oil and cook the pepper blend according to the instructions on the bag. Once those are cooked, I add the other half (maybe a little less) of the seasoning packet and again, cook until it starts to char.

Meanwhile cook your instant rice according to the instructions & drain and heat up black beans in the microwave.

Once it’s all done, plate it with the rice on the bottom, add your black beans, peppers, & top with the shrimp. I like to garnish it with an avocado on the side but that’s optional.

Squeeze your lime over the top of it all and garnish with fresh cilantro & optional salsa over it all!!!
