4 large bell peppers (any color)

1 lb ground beef

1 cup cooked bacon, crumbled

1 small onion, finely diced

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup ketchup

1 tablespoon mustard

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked rice (optional)

Fresh parsley, chopped (for garnish)

Directions:

Preheat the Oven:

Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

Cook the Filling:

In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess fat if necessary.

Stuff the Peppers:

Spoon the beef mixture into each bell pepper, filling them generously. Top each pepper with shredded cheddar cheese.

Bake:

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

Serve:

Garnish the stuffed peppers with fresh parsley and serve hot. Enjoy these Bacon Cheeseburger Stuffed Peppers as a delicious, low-carb alternative to the classic burger!
