Grilled Chix w/ Corn, Jalapeños, w/ cream sauce
Ingredients
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Corn:
2 cups frozen corn, thawed
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Garnish:
2 jalapeños, thinly sliced
For the Creamy Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Marinate the Chicken: In a bowl, combine chicken cubes with olive oil, chili powder, garlic powder, salt, and pepper. Let marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
Grill the Chicken: Preheat your grill to medium-high heat. Place the chicken cubes on the grill and cook for 2-3 minutes per side, or until fully cooked and slightly charred. Let the chicken rest for 5 minutes before serving to keep it juicy.
Cook the Corn: In a skillet, heat olive oil over medium heat. Add the thawed corn and cook until it’s tender-crisp, about 5-7 minutes. Season with garlic powder, salt, and pepper for added flavor.
Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, lime juice, minced garlic, salt, and pepper until smooth and creamy.
Assemble the Bowls: Divide the cooked corn among bowls. Top with the grilled chicken and sliced jalapeños. Generously drizzle with the creamy sauce, ensuring each bite contains the perfect mix of spicy and creamy elements.
Tips for Perfection
Chicken Options: While this recipe uses chicken breast, feel free to substitute with thighs for a juicier alternative.
Spice Levels: Adjust the amount of jalapeños and chili powder based on your preference for heat. For an extra kick, add a pinch of red pepper flakes to the creamy sauce.
Serving Suggestions: Complement this dish with a side of cooked rice, quinoa, or a fresh green salad to round out the meal.
