... Read moreI absolutely love how versatile and delicious cod is, and this chili-lime recipe is definitely one of my go-to's for a quick, healthy meal! The way those five chili-lime cod fillets look, garnished with fresh green cilantro and bright lime wedges, always makes my mouth water. It truly showcases a delicious and healthy meal that's perfect any night of the week. Sometimes, though, I find myself wanting to explore different flavor profiles or cooking methods, especially when I see so many amazing ideas out there. If you're like me and often search for something with a 'sticky garlic butter sweet chili' vibe, you'll be glad to know you can easily adapt this base recipe! For that sticky glaze, I've had great success adding a tablespoon of honey or maple syrup to the original marinade, which caramelizes beautifully in the oven. And for a sweeter chili kick, sometimes I'll swap out half of the regular chili powder for a sweet chili garlic sauce. To get that rich, savory 'garlic butter' finish, a simple trick is to brush a mixture of melted butter and minced garlic over the fillets during the last few minutes of baking, or right after they come out of the oven. It adds an incredible aroma and flavor that’s just irresistible! Beyond fillets, don't forget about other parts of the cod! Have you ever tried cooking cod cheeks? They're often overlooked but are incredibly tender and have a delicate, almost scallop-like texture. If you're wondering how to cook cod cheeks, they're fantastic pan-seared with a little olive oil, garlic, and a squeeze of fresh lime juice, much like the flavors in these chili-lime cod fillets. They cook very quickly, usually just 2-3 minutes per side, until they're golden brown and opaque. You can also quickly air-fry them for a crispy exterior. Just remember, cod in general cooks fast, so keep an eye on it to prevent overcooking, which can make it dry. Pairing these wonderful chili-lime cod fillets with different sides is also a fun way to keep your meals fresh. While rice or a fresh salad is always a winner, I sometimes serve them with roasted asparagus, quinoa, or even a light pasta tossed with cherry tomatoes and basil. These chili-lime cod fillets are also fantastic for meal prep! I often make extra and enjoy them cold on a vibrant salad for lunch the next day. It’s such a simple way to ensure I’m eating something truly delicious and nourishing, even on busy days.
