Grilled Peach and Honey Mustard Dressing 🍑🍯
Ingredients:
- 2 ripe peaches, halved and pitted 🍑
- 2 tablespoons honey 🍯
- 2 tablespoons Dijon mustard 🌱
- 2 tablespoons balsamic vinegar (white or regular) 🍶
- 2 tablespoons extra virgin olive oil 🫒
- 1 tablespoon soy sauce or tamari 🥢
- 1 clove garlic, minced 🧄
- Salt and pepper to taste 🧂
Instructions:
1. Preheat a grill or grill pan over medium-high heat 🔥. Lightly brush the peach halves with olive oil to prevent sticking 🫒. Grill the peaches cut-side down for 2-3 minutes until grill marks appear and the peaches soften slightly 🍑. Remove from the heat and let cool ❄️.
2. Dice the grilled peaches into small pieces 🔪. In a blender or food processor, combine the grilled peaches, honey, Dijon mustard, balsamic vinegar, olive oil, soy sauce, and minced garlic 🍯🌱🍶🫒🥢🧄. Blend until smooth and creamy 🌀. If the dressing is too thick, add a tablespoon of water or more olive oil to adjust the consistency 💧.
