3 Very ripe bananas (medium to large)
1/2 Cup (8 Tbsp) Unsalted butter room temp
3/4 Cup granulated sugar
2 Large eggs, Lightly beaten
1 1/2 Cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 Vanilla extract

1. Preheat oven to 350F. Grease and flour a bread pan.
2. In a mixing bowl, cream together butter and sugar
3. Mash bananas with a fork until it looks like chunky applesauce - add to batter with two eggs, mix until blended.
4. In a separate bowl, whisky together flour, baking soda and salt. Add to batter
5. Add vanilla extract and mix. Pour into loaf pan. Bake for 50-55 Min or until toothpick inserted at center and comes out clean. Let bread rest 10min before transferring to a wire rack to cool.
