Easy Empanadas

Follow the instructions on the back of a bag of Maseca how to make tortillas. Combine 2 cups of corn flour with 1 ½ cups of water. Knead until smooth, roll into balls. Use a tortilla press or two wooden cutting boards to flatten the balls into tortillas.

Add filling of your choice to the tortilla. Some ideas are - rotisserie chicken, chorizo con papas, beans, cheese, ground beef, steak, shrimp.

Add oil to a shallow pan and heat on medium.

Fill the tortillas with filling and then fold them over in half and gently press the sides together. add them to the pan, when you add them make sure you lay them away from you so the oil doesn’t splash in your direction. Dry on each side until golden. If you don’t like to fry food or for a healthier alternative use your air fryer or simply add the tacos into a hot comal and cook until done on each side.

Serve with lettuce, queso fresco, shredded lettuce and salsa.
