Elevate Your Lattes With This Syrup! 🍓🍓
This is one variation of strawberry syrup that I love making. I use raw honey as the sweetener to this recipe to try and avoid any refined sugars. Do be sure to cook the syrup down til it slightly thickens. It will go through a few stages before it’s complete. First the strawberries will soften and release water, then it will begin to look frothy, then it will slightly thicken and look more syrupy! This is when you know it’s done.
This syrup is great in matcha or coffee or even can be used in dessert recipes. My favorite way to use it in a chocolate strawberry latte 🍓♥️
Strawberry Syrup
Ingredients
1 1/2 cups strawberries
1/3 cup honey
1/4 cup water
1/4-1/2 of a lemon juiced (optional)
Directions
1. Combine honey, chopped strawberries, and water in a sauce pan on medium heat. Add lemon juice as well if using.
2. Stir until honey and water are well combined. Honey should dissolve into the water and not look seperate.
3. Simmer for about 15 mins. Strawberries should begin to soften and release water. Eventually the mixture will begin to look frothy. It should then slightly thicken and that’s when you know it’s done.
4. Turn off heat and allow mixture to cool for about 15 mins.
5. Pour syrup through a fine mesh strainer into a bowl.
6. Gently press strawberries to get all liquid through the strainer so all that remains is strawberries. Strawberries should look be very soft.
7. Once completely cool, store strawberry syrup in a sealed container in the fridge. It should last about 2 weeks or maybe longer.

Making your own strawberry syrup at home is not only easy but also ensures that you're using wholesome ingredients. Unlike store-bought syrups, which often contain preservatives and refined sugars, this recipe utilizes fresh strawberries, honey, and water, making it a healthier choice for your beverages and desserts. To start, gather fresh strawberries—1 1/2 cups is an ideal quantity. Wash and chop them before adding them to a saucepan with 1/3 cup of raw honey and 1/4 cup of water. For a hint of acidity and additional flavor, you can juice half a lemon into the mix, but this is optional. Begin heating the saucepan over medium heat and stir the mixture gently. You will notice the strawberries starting to soften and release their juices. After about 10 to 15 minutes of simmering, the mixture will froth and gradually thicken, indicating that it’s ready. Once complete, allow the syrup to cool before straining it through a fine mesh strainer to remove the solids. The syrup can be stored in a sealed container in the fridge, where it will last for about two weeks. This homemade strawberry syrup is versatile and can be drizzled over pancakes or waffles, stirred into yogurt, or used to create a delightful strawberry lemonade. Try adding it to your morning oatmeal for a fruity twist or using it to flavor desserts like panna cotta and ice cream. In summary, creating this strawberry syrup at home allows you to control the ingredients and use it in various creative ways, enhancing not just your lattes but also your overall culinary experiences.
